Jams and Marmalades. Nothing like mom made, though I'm sure it was good.. Kalliope makes our with whole fruit, minus the seeds of course. But she cooks them gently, enough sugar but not traditionally over done. Then she adds a bit of fresh sage or chamomile or what ever she thinks compliments the fruit at hand. She does not add water, she add fruit juice from the fruit or Floral Water(s) and ad wee bit of essential oil.. What I can tell you is if you have the patience to store a jar or two away and come back a year or 3 later you will be pleased and wish you had stashed more away! Yes they improve as they age. I happens when things are not cooked to death, when you use natural flavoring the flavors meld and beauty arrises for your gastronomical palate to behold.
