Kalymnian Breakfast

Kalymnos Breakfast - the Kalymnian Breakfast.

Kalymnian Breakfast is a traditional breakfast with many variations meant to give you the energy one needs for a hard working morning! Traditionally Barley is chosen over wheat for breads that are baked until extremely hard. They can last almost indefinitely if stored in an air tight can. They are brought to life with a quick dunk in water and broken into pieces. Olive Oil is drizzeled over them liberaly and honey is then drizzeled over as well. Then Thrymbe is crushed and added to the top and allow to sit a few minutes as the moistures soften the barley bread and searved as is or with Olives and Cheese such as Feta or Goat/Sheep Mizethra Cheese this is a breakfast that once tried you are hooked!

Barley is grown as it does not require rich and deep soil to grow where as Wheat needs space and soil and Kalymnos just simply doesn't have that luxury. How ever Kos does and from there trade for flour and sesame is as old as time. Wheat flour is required for the most tasty of Kalymnian Breads the 7 Dough but that is another story and found where 7 Dough is offered!
