The Mountains of Kalymnos are rich in organic wild herbs. We gather them with respect, carefully to insure future harvests. Due to the harsh climate the quality and strength of the plants is incredible they are concentrated and very therapeutic. The herbs we offer are wild crafted and gathered in their own time of perfection. Some herbs are harvested 2-3 times over their growing time as they offer different qualities which we use for our teas. Example is oregano, early it's gathered before it flowers for it's leaves, later when it first flowers just when the flowers have opened we gather them for oregano essential oil, oil infusions and tinctures. When the flowers have dried we gather them again for teas and locally they use the dried flowers for cooking.
