Herbs is one thing you cannot forget once you have come to Kalymnos and walked the mountains, vallies and canyons. You might have had oregano before, but this wild oregano is beyond anything I have found traveling the world. Again it is the dry no rain summers, that have played their part in sculpting the herbs to be so full of oils and flavors. Little soil in the mountains the herbs bake from the radiant heat of the rocks, so to survive they adapt. Brought to you by nature the patches are there every year, thyme no even close to what a planted garden yields is so strong that it burns the tounge but when used sparingly your food will never be the same.

We collect them in their proper time and in various stages. We do not collect them once the flowers have given way to seed. Some do but for us that is passed it's culinary time and we like to leave it to insure future plants for generations to come.

In the right time of year we also distill these and offer their oils and floral waters as well.
