Maira's Traditopnal Kalymnian Cookies

Unique to Kalymnos this bread is simply my personal favorite! Fresh Baked it is to die for. Rusks are the traditional way to preserve (no preservatives added) it is baked to a hard crisp thick slice that when quickly dunked in water, ouzo or put into a soup comes back to life and oh the favors. Those with hearty teeth can brave biting pieces and crewing it up it is delicious.

Why 7 dough? Well actually it is 7 x kneaded. There is no yeast used as in traditional bread maing. The rising agent is gathered from Chick Peas soaking in water for days it begins to ferment and foam, this foam is collected and used to make this bread which is indigenous to Kalymnos. Anise, Black Seed and Sesame are used as well and traditionally the loaf is a braided circle, the other is the rusk which is a more squat loaf cut into thick slices before going into the oven to bake it bone dry. This is stored in an airtight container and used as needed. The fresh bread is just that and consumed within a day or 2 for best results.

By the way this bread also makes the absolute best French Toast ever!
